- Wide noodles (like tagliatelle) or long pasta400 g
- Chicken breasts2 (about 300 g)
- Tunisian harissa2 tablespoons
- Tomato paste1 tablespoon
- Red bell pepper1
- Green bell pepper1
- Onion1
- Garlic3 cloves
- Ground cumin1 teaspoon
- Ground coriander1 teaspoon
- Paprika1 teaspoon
- Turmeric1/2 teaspoon
- Pitted green olives100 g
- Olive oil3 tablespoons
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Fresh chopped parsley2 tablespoons
Instructions

Cook the noodles in a large pot of boiling salted water according to package instructions. Drain and set aside.

In a bowl, mix harissa, tomato paste, cumin, coriander, paprika, turmeric, salt, and pepper with 2 tablespoons of water to make a spice paste.

Heat olive oil in a large skillet or wok. Sauté chopped onion and garlic until tender. Add chicken breasts cut into strips and brown.

Add diced bell peppers and the spice paste. Stir-fry for 5 minutes until vegetables are tender and chicken is well coated.

Stir in green olives and cooked noodles. Toss gently and stir-fry for 2-3 minutes to blend flavors.
