
Algerian Stir-Fried Noodles with Chickpeas and Ras el Hanout Spices

- Durum wheat noodles (spaghetti or thick vermicelli)300 g
- Cooked chickpeas250 g
- Onion1 large
- Garlic3 cloves
- Ripe tomatoes2 medium
- Sweet green pepper1
- Olive oil3 tbsp
- Ras el hanout1 tsp
- Ground cumin1/2 tsp
- Sweet paprika1/2 tsp
- Fresh coriander1 bunch
- Salt1 tsp
- Black pepper1/4 tsp
- Preserved lemon (optional)1/2

Cook the noodles in a large pot of boiling salted water according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add finely chopped onion and sauté until translucent.

Add crushed garlic, seeded and diced green pepper, and chopped tomatoes. Sauté for 5 minutes.

Stir in chickpeas, ras el hanout, cumin, paprika, salt, and pepper. Mix and cook for 5 minutes to let the flavors develop.
