
Algerian Noodles with Chickpeas and Roasted Vegetables (Chaariya Mfawwar)

Ingredients
- fine noodles (angel hair)250 g
- cooked chickpeas200 g
- zucchini1
- carrot1
- onion1
- garlic2 cloves
- crushed tomatoes400 g
- ras el hanout2 tsp
- ground cumin1 tsp
- paprika1 tsp
- olive oil3 tbsp
- vegetable broth750 ml
- salt and pepperto taste

Preheat oven to 200°C. Cut the zucchini and carrot into small dice, mince the onion and garlic. Place the vegetables on a baking sheet, drizzle with olive oil, sprinkle with ras el hanout, cumin, paprika, salt and pepper. Roast for 20 minutes.

Meanwhile, heat the vegetable broth in a large pot.

Add the crushed tomatoes and chickpeas to the broth. Let simmer for 10 minutes.

Add the roasted vegetables and noodles, mix well.

Cook over low heat for 8-10 minutes until the noodles are tender and have absorbed most of the liquid.
