
Tunisian Mloukhiya
Tunisian mloukhiya is an iconic Maghrebi dish made from powdered jute leaves. This thick soup, flavored with garlic and olive oil, is traditionally served with toasted stale bread and a squeeze of lemon to balance the flavors. This halal, meat-free and animal-product-free dish is ideal for vegetarian diets. Its velvety texture and slightly bitter taste make it a comforting starter, perfect for winter evenings in Tunisia.

- mloukhiya powder (jute leaves)250 g

- black pepper1/2 tsp
- hot chili powder (optional)1 tsp
- water1 L
- lemon1
- stale bread200 g

Heat olive oil in a pot. Add crushed garlic and sauté for 2 minutes.

Add mloukhiya powder, salt, pepper, and chili. Stir with a wooden spoon for 1 minute.

Gradually pour in water while stirring to avoid lumps. Bring to a boil, then reduce heat.

Simmer on low heat for 2 hours, stirring every 15 minutes. The mloukhiya should thicken and become creamy.

Meanwhile, cut the stale bread into cubes. Lightly toast them in the oven or in a dry pan.

Serve the mloukhiya hot in bowls, drizzle with lemon juice, and sprinkle with toasted bread cubes.
