Ingredients
- red lentils250 g
- fine bulgur100 g
- onion1 medium
- tomato paste1 tablespoon
- olive oil3 tablespoons
- ground cumin1 teaspoon
- sweet paprika1 teaspoon
- fresh mint1 bunch
- lemon1
- salt and pepperto taste

Rinse the red lentils and cook them in 500 ml of boiling salted water for about 10 minutes until tender.

Add the fine bulgur, mix, cover, and let rest off the heat for 10 minutes so the bulgur absorbs the liquid.

Meanwhile, sauté the chopped onion in olive oil until translucent. Add the tomato paste, cumin, paprika, salt, and pepper, and stir.

Incorporate this mixture into the lentil-bulgur mixture and work everything with your hands or a spatula until you get a homogeneous dough.

Shape oval or cigar-shaped balls with slightly wet hands.

Arrange them on a plate, sprinkled with chopped mint and drizzled with lemon juice. Serve chilled or at room temperature with lettuce leaves.
