- Leg of lamb1.5 kg
- Olive oil3 tbsp
- Lemon juice2 tbsp
- Garlic4 cloves
- Fresh rosemary2 sprigs
- Fresh thyme2 sprigs
- Sweet paprika1 tsp
- Ground cumin1 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Onions2
- Carrots2
- Potatoes3
- Chicken broth250 ml

Preheat the oven to 160°C. In a bowl, mix olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper.

Generously coat the leg of lamb with this marinade. Insert rosemary and thyme sprigs into the meat.

In a roasting pan, arrange roughly chopped onions, carrots, and potatoes. Place the lamb on the vegetables and pour in the broth.

Cover with aluminum foil and bake for 2 hours. Then remove the foil and continue cooking for 30 minutes to brown the surface.
