
Turkish Beef Kebab
Oh, Turkish beef kebab is a direct trip to the streets of Istanbul! I brought this recipe back from my travels in Turkey, where the spices perfume the evening air. Ingredients
- Ground beef500 g
- Onion1 (grated)
- Garlic2 cloves (minced)
- Fresh parsley3 tablespoons (chopped)
- Ground cumin1 teaspoon
- Sweet paprika1 teaspoon
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Olive oil2 tablespoons
- Pita or Turkish bread4
- Plain yogurt200 ml
- Harissa or spicy tomato sauce (optional)2 tablespoons
- Green salad (lettuce, tomato, cucumber)1 bowl

In a large bowl, mix the ground beef with the grated onion, garlic, parsley, cumin, paprika, salt, and pepper. Knead well to form a smooth paste.

Divide the mixture into 4 equal portions and shape into elongated meatballs (kebab) using slightly oiled hands.

Heat a pan or grill with a little olive oil over medium-high heat. Cook the kebabs for about 10-12 minutes, turning regularly, until golden brown and fully cooked.

Meanwhile, prepare the pitas: warm them in the oven or in a dry pan. Mix the yogurt with a pinch of salt and dried mint if desired.

To serve, cut the pitas in half, fill with salad, place the kebabs, and drizzle with yogurt sauce and optionally harissa. Serve hot.

Garnish with fresh parsley and accompany with lemon wedges.
