
Turkish Lamb Kebab (Şiş Kebab)

- Lamb (leg or shoulder, cubed)600 g

- Plain yogurt3 tbsp
- Olive oil2 tbsp
- Sweet paprika1 tsp
- Ground cumin1 tsp
- Salt and black pepperto taste
- Bay leaves3
- Pita bread or Turkish bread4
- Cherry tomatoes and green bell pepperfor garnish

In a bowl, mix yogurt, olive oil, paprika, cumin, salt, and pepper. Add lamb cubes and sliced onion. Cover and marinate in the refrigerator for at least 2 hours.

Preheat grill or barbecue. Thread lamb cubes onto metal skewers alternating with pepper pieces and cherry tomatoes. Add a bay leaf per skewer.

Grill skewers for 10-12 minutes, turning regularly, until meat is cooked through but tender.

Meanwhile, warm pita bread on the grill or in the oven.

Serve skewers on warm bread, drizzle with lemon juice, and accompany with rice pilaf or arugula salad.
