
Algerian Karantika (Calentica) Sandwich
Karantika, also known as calentica, is a true institution in Oran and throughout western Algeria. This chickpea flan, sold in the streets, is traditionally enjoyed as a sandwich, with a generous drizzle of harissa and sometimes a hard-boiled egg. You'll love its texture—both firm and melting—and its subtle flavor of garlic and cumin. Algerian cuisine is full of treasures like this, often overlooked. Ingredients
- Dried chickpeas250 g
- Water50 cl
- Olive oil3 tbsp
- Garlic2 cloves
- Ground cumin1 tsp
- Salt1 tsp
- Harissa (optional)1 tsp
- Round bread or baguette4 loaves
- Hard-boiled eggs (for garnish)2
Instructions

The day before, soak the chickpeas in plenty of cold water.

On the day, drain and blend them with water, garlic, cumin, salt, and olive oil until smooth.

Preheat the oven to 200°C (400°F). Pour the mixture into a greased mold about 2 cm thick.

Bake for 25 to 30 minutes, until the top is golden and the karantika is firm.

Cut into squares and serve in round bread with a little harissa and sliced hard-boiled egg.

Enjoy hot, optionally drizzled with olive oil and sprinkled with cumin.
