Homemade Iskender Kebab

I'm thrilled to share my homemade Iskender Kebab recipe, an iconic dish of Turkish cuisine. I've always loved the balance between tender meat, soft bread, creamy yogurt, and fragrant tomato sauce. In this 100% halal version, I use ground lamb that can be replaced with beef. The secret? Quick cooking over high heat to keep the juices, and clarified butter (ghee) for incredible richness. Serve it with arugula salad and lemon wedges – a treat for your guests!

Ingredients

  • ground lamb500 g
  • onion1 large
  • garlic3 cloves
  • Turkish pita bread2 pieces
  • Greek yogurt200 g
  • clarified butter (ghee)100 g
  • tomato paste2 tbsp
  • olive oil3 tbsp
  • salt1 tsp
  • ground cumin1 tsp
  • smoked paprika1/2 tsp
  • black pepper1/2 tsp
  • fresh parsley1 bunch
  • butter (optional, for serving)20 g

Instructions

    Finely chop the onion and garlic. Mix the ground meat with the onion, garlic, cumin, paprika, salt, and pepper. Let rest for 15 minutes.

    Shape the meat into long skewers or elongated patties. Heat a little olive oil in a pan and sear the meat over high heat for 5 minutes on each side.

    Cut the pita bread into pieces and place them on a serving dish. Sprinkle with a little vegetable broth or hot water to soften slightly.

    Prepare the tomato sauce: melt the clarified butter (ghee) in a saucepan, add the tomato paste, a pinch of salt, and 50 ml of water. Simmer for 3 minutes.

    Cut the cooked meat into thin strips. Place it on the bread. Pour the hot tomato sauce over it, then add a generous spoonful of Greek yogurt.

    Melt a little butter (or ghee) and pour it over the yogurt. Sprinkle with fresh chopped parsley. Serve immediately with grilled vegetables or a salad.
