
Tunisian Fricassé with Tuna and Eggs (Crunchy Sandwich)

It's a flavor explosion with tuna, harissa with a pleasant kick, and the crunch of the salad. Ingredients
- Flour500 g
- Baker's yeast1 packet
- Salt1 teaspoon
- Warm water250 ml
- Frying oil500 ml
- Canned tuna200 g drained
- Eggs2 hard-boiled
- Black olives100 g pitted
- Harissa2 tablespoons
- Cucumber1/2 sliced
- Lemon1 juiced

In a large bowl, mix the flour, yeast, and salt. Gradually add the warm water and knead until smooth. Cover and let rise for 1 hour.

Punch down the dough and form small balls the size of an apple. Flatten them slightly into thick discs.

Heat oil in a fryer at 170°C (340°F). Fry the dough discs until golden and puffed. Drain on paper towels.

Prepare the filling: mash the tuna with lemon juice, add chopped hard-boiled eggs and sliced olives. Mix well.

Split each fricassé open, spread the inside with harissa to taste.

Generously fill with the tuna mixture, add cucumber slices, and close. Enjoy hot or warm.
