
Fava Bean Dip with Olive Oil and Cumin (Creamy Bissara)
Here's a creamy and aromatic Moroccan dip that will surprise you: creamy bissara made from fava beans. Originally from Morocco, this rustic preparation is traditionally served for breakfast, but it's also perfect as an appetizer. You'll love its velvety texture and mild flavor enhanced by olive oil, cumin, and a hint of lemon. For an authentic tagine, spices like cumin, paprika, and saffron are essential; here, cumin is the star. Don't forget to serve it with homemade bread for dipping. Ingredients
- Dried peeled fava beans250 g
- Garlic3 cloves
- Extra virgin olive oil4 tablespoons
- Ground cumin1 teaspoon
- Sweet paprika1/2 teaspoon
- Lemon juice2 tablespoons
- Salt1 teaspoon
- Black pepper1/4 teaspoon
- Water500 ml
- Fresh chopped parsley2 tablespoons

Rinse the dried fava beans and soak them in cold water for at least 8 hours or overnight. Drain them.

In a saucepan, combine the drained fava beans, peeled garlic cloves, and 500 ml water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the beans are very tender.

Drain, reserving the cooking water. Blend the fava beans with garlic, lemon juice, salt, pepper, and 2 tablespoons of olive oil. Add a little cooking water to achieve a creamy, smooth consistency.

Adjust seasoning. Pour the dip into a serving bowl and smooth the surface with the back of a spoon.

Sprinkle with cumin, paprika, and chopped parsley. Drizzle with the remaining olive oil (2 tablespoons) and serve with pita bread or vegetable sticks.
