
Turkish Lamb Skewers with Herbs and Yogurt (Şiş Kebap)

Ingredients
- Lamb (leg or shoulder), cut into cubes600 g
- Greek yogurt150 g
- Grated onion1
- Crushed garlic2 cloves
- Tomato paste1 tablespoon
- Sweet paprika1 teaspoon
- Ground cumin1 teaspoon
- Dried thyme1 teaspoon
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Aleppo pepper (optional)1/2 teaspoon
- Olive oil3 tablespoons
- Peppers (red, green)2
- Red onions2
- Fresh rosemary sprigs4

In a bowl, mix the yogurt, grated onion, garlic, tomato paste, spices, salt, pepper, and olive oil. Add the lamb cubes and coat well. Cover and marinate in the fridge for at least 2 hours (ideally overnight).

Cut the peppers and red onions into pieces similar in size to the meat cubes. On metal skewers (or wooden ones pre-soaked), alternate a cube of lamb, a piece of pepper, and a piece of onion. Finish with a rosemary sprig for aroma.

Preheat a grill, griddle, or barbecue to medium-high heat. Lightly oil the skewers and cook for 10 to 12 minutes, turning regularly, until the meat is charred on the outside and tender inside.

Meanwhile, prepare a dipping sauce: mix 100 g Greek yogurt with a pinch of salt, dried mint, and a squeeze of lemon juice.

Serve the skewers hot, directly over a bed of pilaf rice or with Turkish bread (pide). Accompany with the yogurt sauce and lemon wedges.
