  • chicken500 g
  • basmati rice300 g
  • onion2 medium
  • plain halal yogurt4 tablespoons
  • garlic ginger paste1 tablespoon
  • garam masala1 teaspoon
  • turmeric1 teaspoon
  • ground cumin1 teaspoon
  • biryani spice mix2 teaspoons
  • bay leaves2
  • sunflower oil or halal ghee4 tablespoons
  • salt1 teaspoon
  • boiling water600 ml
  • fresh cilantroa few sprigs
  • fresh minta few leaves

Instructions

    Soak the basmati rice in cold water for 30 minutes, then drain.

    In a large pot, heat the oil or ghee. Add the sliced onions and sauté until golden brown.

    Add the chicken pieces, garlic ginger paste, garam masala, turmeric, cumin, biryani spices, bay leaves, and salt. Cook for 10 minutes, stirring.

    Stir in the yogurt and simmer for 5 minutes. Add the boiling water, bring to a boil, then add the drained rice.

    Cover and cook on low heat for 20 minutes until the rice is tender and the water is absorbed. Do not stir.

    Sprinkle with chopped cilantro and mint, let it rest covered for 5 minutes before serving hot.
